Saturated Fats

There are assertions that we are misinformed about Saturated Fats, and these claims are unfounded. Professor Doctor Mary Enig and nutritionist Sally Fallon, a cook dedicated to cooking with traditional methods, argue that some of the truths are being distorted in their book titled "Nourishing Traditions." Satisfied that saturated fat has never been scientifically proven to cause vascular occlusion, these pairs show that only 26% of the oil residues in the occluded vessels that have been autopsied until now are made up of saturated oils, while the remainder are mostly composed of unsaturated (vegetable) oils.

Another fact that corroborates the relationship between consumption of saturated fats and cardiovascular diseases is that vessel occlusions are rarely found in periods when saturated fats are most consumed. Until the middle of the 1900's, as in the western countries, there was no policy against saturated fat-rich oils such as butter, tailpipes, pork oil, coconut oil, and these oils were often consumed. However, during these periods cardiovascular diseases were almost inexhaustible. When Paul Dudley, a young doctor who is doing his doctor on internal medicine at Harvard University in the United States, introduced a new machine he brought from Germany to his classmates in 1920, all of his doctor friends advised him to move to another area. This machine was an electrocardiograph machine showing intra-arterial occlusions. In those years, although animal fats and butter were used extensively, vascular occlusion was so rare that the young doctor would have difficulty in finding patients.

During that time, the proportion of saturated fats to the total amount of fat in the diet decreased from 62% to 83% in America, with campaigns launched against animal foods and fats. Consumption of soybean oil, corn oil, sunflower oil and canola oil, which are introduced as heart friendly and made up of polyunsaturated fatty acids, has increased by 400%, while the amount of consumed butter per person has decreased from 8 kilograms to 2 kilograms per year. If people are doing the right thing and reducing the amount of saturated fat so much in their diets and choosing vegetable oils, how is it that cardiovascular diseases, a disease that is not encountered about a century ago, can now become the number one cause of death in all western states by 360%?

It is obvious that something is wrong with our diet and lifestyle, but linking this mistake to saturated fat is actually a bigger mistake than Mary Enig and Sally Fallon. I will explain why the consumption of saturated fats does not always mean increased risk for cardiovascular disease by presenting in future articles (these are found in the books of Serkan Yimsel, which are not available on our site), from these two researchers, or even from other researchers. Now let's look at the critical tasks of saturated fats that have taken these heavy accusations before: in those days, the proportion of saturated fats and saturated fats to total fats in the diet in America has been reduced to 62% from 83% . Now let us first look at the critical tasks of saturated fat in our bodies that take these heavy accusations:

1- Saturated fats constitute at least 50% of the cell membrane and contribute significantly to the function of the cells.
2-Saturated fatty acids increase the amount of HDL known as good cholesterol.
3- In order for the calcium mineral to be effectively transported to the bones, at least 50% of the oils in our diet must be saturated.
4- They protect the liver from toxins in alcohol and similar derivatives.
5- They strengthen the immune system.
6 - Omega-3 essential oils from the body to make more economical use of the body. In the absence of saturated fats, the percentage of use of essential oils decreases.
7- Short and medium chain length saturated fats, germs have the property of jail. They defend the organs of the digestive system against harmful bacteria.
8- Because saturated oils do not deteriorate their structural stability for a long time, they degrade later than unsaturated oils in heating and cooking processes.

Overview of Saturated Fats in World Diets

If saturated fats increase the risk of cancer and cardiovascular disease, the races most consuming these oils should be able to cope with the disease that they have been promised. However, research has not always yielded the expected results, and these results have never been reflected in the media, thinking that they are not satisfactory.

These are the best examples, Eskimolardır. Dr. Weston A. Price, who studies and mentions Eskimolar's life struggles, nutritional patterns, dental / bone / body health, known as North American natives, is well known in his book "Nutrition and Physical Degeneration". So much so that even though nearly 90% of the total calories they consume in one day are from fish and marine animals. Price did not find any evidence of heart disease, tooth decay or any other chronic illness. Dr. It is doubtful that Price's interesting work has never been expressed in school nutrition lessons or in the media.

One of the races most nourished by saturated fat in the world after the eruptions is the people of Masai tribe who are living in Kenya in Africa. These people drink about 2 liters of freshly squeezed milk a day. However, an adult Masai native can eat an average of 1.8 to 4.5 kilograms of meat. In spite of all these, cardiovascular diseases are not enough to be tried in this country.

In the same way, butter, cream, cheese, duck oil etc in your diet. Only 80 of 100,000 adult men in France's Gascony region, where animal fats are located in excess, are due to heart problems, while in the United States, which is revolutionizing vegetable oils, margarine and low-fat products, this rate is 315 in 100,000.

A recent claim by Western scientists is that olive oil and vegetable-derived foods are abundant in the diet of this race because of the very rare occurrence of cardiovascular disorders in Mediterranean countries. Some scientists even suggest that the Mediterranean people are completely vegetarians. Although the Italian and Greek cuisines are rich in vegetables and fruits, pasta and pastries and olive oil, the diet in these countries is certainly not vegetarian. Meat and fish are constantly consumed, eggs are hidden in a variety of sauces and sausages, and sausages, butter, cream and pork oils are also common in the diet. Cheese consumption is also quite high. So much so that any village in Crete in Greece consumes about 250 grams of goat cheese per day. Since 70% of goat cheese oil is saturated fat and if an average adult's total daily calorie is taken as 2400 calories, only saturated fat supplied with cheese corresponds to 18% of total calories per day. Do these scientists, who limit their daily total calorie content of saturated fats to 10% in a single day in the western states, will be able to show the Mediterranean diet as a good example of plant-based diets when they learn that Greek villagers are just getting along with cheese?

University Surveys Fail to Achieve Satisfaction of Saturated Fats

Modern medical scientists, who are studying the races and their diets around the world, have taken their results in the labs of pale universities and tried to get results using control groups. But the results are still unsatisfactory.
The first major study we will discuss in this section is the Irish-Boston survey. Doctors of Harvard University and doctors of Dublin University in Ireland jointly conducted this research. An Irish group was selected as a male, compared with his brothers in Boston. One of the ten conditions sought at the beginning of the research is the fact that the Baston brothers live there for at least 10 years and that they are constantly coming to Ireland. In this way, a total of thousand men participated in the research. About 20 years after the research, siblings living in Boston were found to have heart attack deaths greater than their Irish brothers. However, brothers in Boston were fed on a diet with lower animal fat and cholesterol than their Irish brothers. Despite this negative outcome, the Irish-Boston survey is still evidence that animal fats need to be reduced.

Another research that has been consistently proposed in campaigns against saturated fat is the Puerto Rico-Honolulu survey. In this study, jointly conducted by the Institute of International Heart and Lung Diseases and a university hospital in Puerto Rico, 16,000 healthy middle-aged men were examined in 3 groups. After 6 years of research, the dietary habits of men who suffer from heart problems have been compared with those who have not been caught. Men with cardiovascular diseases have been found to consume less starchy foods (bread, potatoes, rice, etc.) than those who are not caught and thus added to the findings that consumption of more starch and carbohydrates will protect us against heart disease. In all three groups, however, the percentage of starchy and carbohydrate foods in the total diet was the same. For this reason, it is obvious that the amount of starchy foods consumed by individuals with low total calorie daily is low. However, this detail has never been mentioned in the test result. Another fact that is not included in the test results is the fact that men who are suffering from cardiovascular diseases are fed with higher vegetable oils with a higher unsaturated fat content. Of course, this important result will be removed from the test because many of the doctors surveyed are doctors recommending vegetable oils to us.

Dr. Uffe Ravnskov briefly summarizes all the research that investigated cardiovascular disease and its relation to people's diet. In this book, a total of 27 researches were conducted within the period up to 1998, 34 patients and control group were used and more than 150.000 individuals were investigated. Only 3 groups of 34 heart-affected subjects were fed more animal fat than control group. There was no difference in the amount of animal fats in the diets between healthy individuals who consumed one less animal fat and the rest of the group with 30 heart disease. In addition, three more groups of heart disease suffered more vegetable fat, and only one group consumed less. Are you at the level where these results of the research show that experts on radio and television, health programs and magazines are so responsible for saturated fats? Of course not.
